Put all ingredients together in a saucepan, stir to combine over a high heat until it reaches boiling point. Then lower the heat to a simmer; stir regularly until it reduces, thickens and all the coconut cream has dissolved. Also remember to keep trying the sauce (very carefully!) as you go and cook until you can taste a caramel flavour. Add more sea salt if you wish but do it in very small steps, again tasting as you go. This sauce should take approximately 15 minutes to make.
Enjoy warm or cold with your pancakes…I serve this in my trailer with a brown sugar cream cheese frosting (also made from scratch), layered in between my pancakes.
