Last weekend saw LINLEYS Bistro join the Exeter Street Food Market run by Exeter Innovations in the Guildhall Shopping Center. Run by experienced catering manager; Aisha Clarke and her partner, offshore powerboat racer; Tom M Swan.
A young couple, passionate about good food and local produce, they
notice the boom in street food and how this new trend was growing in
Exeter, close to their base at Budleigh Salterton.
Aisha & Tom recently circumnavigated Ireland together, a boating
passion they both share; here is where she came up with the idea to
start a street food business with a focus on fresh good ingredients,
supplied by local farms and artisan growers. Aisha left her role in a
Devonshire Deli & focused on launching LINLEYS, a name that goes back 400 years in Tom’s family.
LINLEYS menu is simple but with a focus on quality and seasonal
ingredients, the menu reflects what their farms can produce at the time.
Proving to be a popular dish this weekend was the creamy mushroom and garlic chicken wrap, using a selection of wild mushrooms from Devon with locally raised, high quality organic & free-range chicken. Their “Brambley Pig” featured their own apple sauce, picked from Toms garden, poached with chilli cider and cinnamon-this is a must as a winter warmer, keeping you fuelled throughout your day!
An eye catching gazebo is positioned on the market square, between WH
Smiths & Poundland. Their wood fronted counter, slate menus, bunting and
design of the stall creates a luxury feel and different concept to the
traditional food stall. Pop by and relax in the nearby seating areas,
kept stocked with the daily news papers & keep warm by the heat lamps &
During December LINLEYS will be present in the market square everyday
between the 2nd-23rd. They plan to introduce a seafood and sparkling
wine bar, serving from a 60’s vintage van in 2014, along with an old
fashioned sweet shop towards the end of the year.
