….on trend true blue foods NEW from Funnybones Foodservice
Anticipating a demand for fashionable purple foods in 2017, Funnybones Foodservice has launched two new products made from blue corn (also known as purple corn). The new blue corn tortillas and organic blue corn chips look dramatic with their entirely natural strong purple colouring, and they make a real statement on the plate.
According to many experts, including the global health food company Whole Foods, our plates are going to look very colourful this year, with purple foods in particular expected to fly off the shelves. Products made from blue corn fit this trend perfectly, together with purple fruits and vegetables such as aubergines, red cabbage and blueberries.
Blue corn varieties are native to the heartlands of the Funnybones Foodservice area of expertise. Grown in Southwest America and Central and South America, blue corn is essentially the same species as white and yellow corn, however, the blue version contains less starch, has 20 per cent more protein and has a lower glycemic index than white corn. It also contains anthocyanins which are said to have an antioxidant activity and are also found in other healthy purple foods.
Blue corn is ground into flour in a traditional way which enhances its sweet, nutty taste and makes for very delicious and nutritious tortillas and chips.

explains Tom Styman-Heighton, Development Chef at Funnybones Foodservice.
“However, we have not introduced these new products simply because they are fashionable and good for you, but also because they are truly delicious. The blue tortillas give an exotic look to a wrap or cooked dish such as burritos, and with their sweet taste complement many fillings, and the chips look great as part of a chip selection, perhaps mixed with our white and red corn chips.”
Blue corn tortillas – a choice
With tortillas being such a versatile product, Tom has chosen to introduce two different types of blue corn tortilla, each suitable for different uses. The tortillas, which are made by Blanco Nino, contain no artificial colourings or flavourings. They are made very simply from organic blue corn flour, water and lime to create an amazing quality product.
15cm Soft Blue Corn Tortillas need to be warmed through for a few seconds on the grill and can be served as wraps or used in cooked dishes. The smaller 10cm version is ideal for serving street food.
15cm Frying Blue Corn Tortillas are ideal for use in dishes such as Tostada, Quesidillas and Taquitos and can also be cut up into chips and fried. Each tortilla needs frying for 20-30 seconds to bring out its flavours.
Blue corn chips – go red, white and blue
Blue corn chips are great for Nachos and dipping dishes of all sorts. They look most effective when served with chips made from red corn and white corn, so that the customer receives a red, white and blue serving.
